Spicy Lobster Pasta
Ingredients
12 oz. spaghetti
Kosher salt
2 tbsp. olive oil
2 tbsp. Unsalted butter
1 large Shallot, finally chopped
1 tsp. Cherry tomatoes, Halved
1lb. Picked cook lobster meat
1 tsp. Finally grated lemon zest
Step 1
Cook spaghetti and a large pot of boiling salted water, staring it occasionally, until al dente. Drain, reserving one cup of pasta cooking liquid (the secret to silky sauce).
Step 2
Meanwhile, heat oil and butter in a large skillet over medium – high heat. Cook Shallot and red pepper flakes, stirring occasionally, until shallot is softened, about two minutes. Add the tomatoes and cook, stirring often, until tomatoes are soft and juicy, 5 to 8 minutes.
Step 3
Add the lobster meat to skillet and toss to coated. Add pasta and 1/2 a cup reserved pasta cooking liquid. Season with salt and pepper. Cook, tossing constantly and adding more reserve pasta cooking liquid as needed, until sauce thickens and coats the pasta. About two minutes.
Step 4
Serve pasta topped with lemon zest, lemon wedges alongside for squeezing over.
