Mussels Marinara for Easy Cooking

Ingredients

  • 2 Pounds cultivated mussels

  • 2 Cups marinara sauce

  • 2 Tablespoons dry white wine

  • 2 Tablespoons chopped fresh flat-leaf parsley

  • Pinch of dried oregano

  • Pinch od dried red pepper flakes

  • Salt and freshly ground black pepper

  • Sliced Italian bread, preferably toasted in a broiler or on a grill, for serving

Step 1

If using live mussels, dump into colander and rinse well. Any mussel that does not close (at least a little) when sprayed with water is no good and should be discarded.

Step 2

Remove any “beards” remaining. Put mussels into a heavy skillet and add marinara sauce, wine and seasoning. Bring to a boil over medium heat, stirring occasionally.

Step 3

Mussels are done when the shells open up (discard any that remain shut). If using frozen mussels, cook until completely heated through. Serve with crusty bread to soak up the juice. Serve hot, with the toasted bread.
