Traditional Mofongo

This dish hails from the island of Puerto Rico and utilizes the flavors of fried-plantains to bring the taste to life.

Ingredients

  • 3 Large green Plantains

  • 3 cups water mixed with ½ teaspoon kosher

  • 1 Lb. Diced bacon

  • 3 garlic cloves, peeled and chopped

  • 3 sweet chili peppers, seeded and minced

  • ¼ cup olive oil

  • ½ teaspoon salt

  • ¼ black pepper

  • ½ cup canola oil

    Yields 6 Servings

Step 1

Pell the plantains and cut them into ½ slices, dropping them into the salted water. Sautéed the bacon then drain and discard the fat. Chop coarsely and set aside.

Step 2

Combine the garlic and chili peppers, and olive oil and season with salt and pepper. Heat the oil and fry plantain slices until golden brown. Drain on paper towel.

Step 3

Put a few teaspoons of the garlic-oil mix mortar. Add 1/6 of the bacon and 5 or 6 slices of plantain. Mash and press firmly into the mortar. Invert onto a plate. Repeat the process 5 more times.
