Summertime Fish Fritters

Ingredients

  • 1 egg, beaten

  • 3/4 cup milk

  • 1 tablespoon butter, melted

  • 1 tablespoon baking powder

  • 8oz Salt cod, soak overnight

  • 1 tablespoon vegetable oil

  • 1 medium onion, finally chopped

  • 1 small pack of Goya Sazón without annatto Buy it in any supermarket

  • 1 fresh red chili Pepper, deseed it and finally chopped

  • 2 tablespoons chopped parsley

  • Oil for frying

  • Lemon wedges, to garnish

Step 1

Sift flour and salt into bowl. Mix egg, milk, and melted butter, and stir into flour. Mix well to a smooth batter. Add a little more milk if necessary. set aside.

Step 2

Meanwhile, drain and rinse salted cod. Place in a large saucepan, cover with cold water, and bring to a boil. Reduce heat, cover, and simmer for 12 minutes until tender. Drain and cool discard skin and any bones. Hit the oil and cook onions until translucent.

Step 3

Stir the fish, onions, and the rest of the ingredients in the batter. Hear about 1/2 Oil in a skillet. Drop spoonfuls of batter mix into the oil, a few at a time. Fry for about two minutes on each side until Chris and golden. Serve with wedges of lemon.
