Traditional Mofongo
This dish hails from the island of Puerto Rico and utilizes the flavors of fried-plantains to bring the taste to life.
Ingredients List
- 3 Large green Plantains
- 3 cups water mixed with ½ teaspoon kosher
- 1 Lb. Diced bacon
- 3 garlic cloves, peeled and chopped
- 3 sweet chili peppers, seeded and minced
- ¼ cup olive oil
- ½ teaspoon salt
- ¼ black pepper
- ½ cup canola oil
Yields 6 Servings
Directions: Traditional Mofongo
Pell the plantains and cut them into ½ slices, dropping them into the salted water. Sautéed the bacon then drain and discard the fat. Chop coarsely and set aside.
